This pie starts with my vanilla wafer crust, made with my homemade vanilla wafers! The filling is a bright orange curd bursting with the flavor of sweet & tart oranges.  Topped with a vanilla bean whipped cream (Organic Valley cream). Keep refrigerated. Best enjoyed within two days.
Freezes well; If well wrapped, will keep in the freezer up to one month. Let thaw in the fridge before serving. 10 inches, serves 8 slices.
